Chai has always been an integral part of an Indian family’s daily life.
There are many variations in the ingredients and the process of making the perfect cup of Chai but the essential ingredients are the same.
Indian families generally make the Masala (Spice mix) in large quantities. Once ground down in to a fine powder the Masala is stored until required. Usually enough is made for a whole year. Traditionally, the whole village would work together to make the Masala.
Due to the fast pace of life in the West we tend to make smaller batches and increasingly so, we either use non-ground spices into the pot or we use the spiced tea bags which are becoming more commonly available. That said, there is nothing like a properly home ground Chai Masala!
I’ve always found that Masala Chai is best shared. As such the following recipe is for 8 cups of authentic masala chai:
What you will need..
Dry Ingredients:
• 2 whole star anise
• 1/2 tablespoon ground cardamom
• 12 whole cloves
• 2 cinnamon sticks
• 1 large piece ginger, candied or fresh, diced
• 1 teaspoon-1 tablespoon crushed black peppercorns
• 2 bay leaves
• A pinch of Nutmeg powder
• 8 bags black tea (or equivalent loose)
Wet Ingredients:
• 4 cups water
• 4 cups milk, hot
• 1/4 cup honey, or brown sugar
Other:
• A sauce pan with a pouring spout
• a sieve
• Cups
• Biscuits, cake or Indian snacks (Sweet or savoury!)
To make the most out of your spices it is best that they are ground. Take all the dry ingredients (Except the teas leaves) and place them into a grinder until they form a fine powder.
Once ground place all the ingredients into the saucepan with a pouring spout (This helps when we come to pour the tea!). Place over medium heat until it is warmed through and small bubbles begin to appear on the surface. Ensure you stir the Chai regularly to mix the ingredients well. When the milk comes to a boil, turn off the heat and stir well. Bring to a boil once again, turn off the heat and stir well. Allow to cool for a moment and then pour in to the cups. Serve and enjoy!
Note. The spice mix can be stored but ensure that it is stored in an airtight container in a dry, cool place out of sunlight.
